Ingredients

  • 1 lb (450 g) ground beef (or ground turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz/400 g) diced tomatoes, with juice
  • 1 can (15 oz/425 g) kidney beans, drained and rinsed
  • 1 can (15 oz/425 g) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup (240 ml) beef broth (or vegetable broth for a vegetarian version)
  • Shredded cheddar cheese, for garnish
  • Sour cream, for garnish
  • Chopped green onions, for garnish
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat the pot over medium heat. Add diced onion and cook until translucent (about 5 minutes). Add minced garlic and sauté for an additional minute.
  2. Increase heat to medium-high. Add ground beef and cook until browned (about 5-7 minutes), breaking it apart with a spatula.
  3. Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Add diced tomatoes, kidney beans, black beans, and beef broth. Mix well.
  4. Bring the mixture to a boil. Reduce heat to low and let simmer uncovered for 20-25 minutes, stirring occasionally.
  5. Taste the chili and adjust seasoning if necessary.
  6. Ladle chili into bowls and garnish with cheese, sour cream, green onions, and cilantro as desired.
