Ingredients
½ cup (120 ml) soy sauce (low sodium recommended)
½ cup (100 g) brown sugar
2 tablespoons (30 ml) rice vinegar or apple cider vinegar
1 tablespoon (15 ml) sesame oil
1 teaspoon (5 g) minced garlic
1 teaspoon (5 g) fresh ginger, grated (optional)
1 teaspoon (2 g) cornstarch (optional for thickening)
1 tablespoon (15 ml) water (optional for mixing cornstarch)

In a small saucepan, whisk together the soy sauce, brown sugar, vinegar, sesame oil, garlic, and ginger (if using).
Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally.
If you desire a thicker glaze, combine cornstarch and water in a small bowl. Once the mixture reaches a boil, stir in the cornstarch mixture and whisk until the glaze thickens (about 1-2 minutes).
Take the saucepan off the heat and let the glaze cool slightly; it will thicken more as it cools.
Use immediately, or transfer to a jar for later use. The glaze can be stored in the refrigerator for up to 1 week.
